Significant Upgrades and Modifications

Two years into owning my Texas Original 20x40x20 offset smoker, I've made several modifications. The original charcoal basket was replaced with a custom-built fire basket, improving the wood-burning aspect. I also fabricated a new grate and framed it for better functionality. The initial 20x20 firebox proved to be perfectly sized.

The stack, originally dented from shipping due to thinner metal, was replaced. The manufacturer seems to have improved the quality, using thicker, more durable metal in their current models. I extended the stack to be 90 degrees to the cook chamber, and added a square collector, visually similar to a fat stack smoker design, for enhanced smoke management.

Interior Enhancements and Accessories

Internally, I added two tuning plates to complement the original heat diffuser plate, ensuring even heat distribution throughout the cooking chamber. I also welded a handle onto the top rack for easier access. Two bottom grates (20x40) were added for more cooking space. A simple shelf underneath accommodates various tools.

The original cover was no longer suitable, so a Brazos cover from Academy Sports was purchased for approximately $40. It's durable and fits perfectly, even after two years of continuous use.

Build Quality and Performance

The smoker's weld quality is decent; there are no significant gaps. While not a high-end Shirley Fabrication smoker, it's a solid build. I added a reversed handle, inspired by Lang smokers, to the back for convenience. Over the past two years, this smoker has consistently performed well, holding up to regular use.

I've owned several smokers, including an Oklahoma Joe and a Horizon. This Texas Original holds its own in the upper mid-market segment, easily comparable to a Horizon. While the initial price may seem high, remember that free shipping is included, saving several hundred dollars, compared to competitors.

Considering the current high steel prices and shipping costs, the overall value of this smoker is excellent for what you get. My total costs including shipping (in North Carolina) and modifications were around $2600. A comparable new smoker might cost significantly more.

Final Verdict and Recommendations

Would I buy it again? Maybe. While I'd consider a Workhorse Pit now due to its similar price and features, the Texas Original Pit offers excellent value for a workhorse smoker. The build quality and performance are exceptional. I have no regrets buying it.
